Top 10 Pinterest Recipes: Tested And Loved!


I am a Pinterest junkie.  Love it.  It gets the creative juices flowing.  Can you hear the "but" coming? Sorry to say I've tried more than one disappointing recipe from Pinterest, so I want to save you some time and feature ten great Pinterest recipes I've TESTED and LOVED! I saved the best for last so make sure to read all the way to the end.  I'm listing (chronologically?) from breakfast to dessert  :)



Flourless Banana Muffins

I love a good gluten free recipe -- this recipe uses oats instead of flour and still came out fluffy and moist. I make a lot of muffins because they are so easy to modify or make healthy.  My daughter loves them -- I put a frozen muffin in her school lunch and it's perfect by lunchtime! I didn't have plain yogurt so I used sour cream, and I added raisins. This one is a keeper!



Texas Trash

A warm bean dip with taco seasoning and cream cheese topped with melted cheddar cheese... A nice deviation from a 5-layer dip.

Pretzel Bites

I'm always a little wary of yeast dough recipes -- these were easy (but time consuming) and so fun to make with my oldest! I was intrigued by the step where you boil the dough pieces in a baking soda solution, and did a little research to learn the difference between pretzels and bagels -- bagels are boiled in a malt syrup solution, in case you were wondering. Everyone kept eating these nubs saying "They taste like a real pretzel!". I have another pretzel recipe from Pinterest that uses a soda wash instead of a boil -- I'll report back later.

Forget French fries, potatoes were made for this recipe. It's like a cross between a fluffy baked potato and a crispy roasted potato. Make sure you put them in the top rack like the recipe indicates so they get super crispy. I put a pat of butter AND drizzle oil on each one before it goes in the oven, because that's just how I roll.



Pesto Chicken

Coconut Shrimp

One of my first pins! Like I said before, I love a good gluten free recipe, and how can you not feel like you're in Hawaii with an umbrella drink when you're eating coconut shrimp? In this recipe you coat the shrimp in cornstarch and beaten egg whites (and coconut) instead of the batter-and-fry method, and honestly tastes just as good without that heavy, greasy feeling.

PF Changs Copycat Mongolian Beef

I love it when I learn something in the cooking process. Making this Mongolian beef, I learned about cutting beef on the bias (how & why). I haven't made many Asian dishes at home, and this turned out sweet and tangy - delish!


Nutella Popsicles With Coconut Milk

You can't go wrong with Nutella! I made these twice -- once with milk, once with coconut milk. The coconut milk and Nutella emulsified better, plus coconut is so good for you.

Carmelitas

This is a scrumptious bar of oatmeal cookie dough, caramel and chocolate chips. It is worth unwrapping all those caramels! So good, so worth the calories, and a tie with my "best for last" pick...

S'mores Bars

I have made these a few times. It is the perfect dessert to bring to a summer BBQ. Marshmallow fluff and Hershey bars baked between two layers of heavenly graham cracker cookie dough. I have tried it with actual marshmallows instead of the fluff but they just disintegrate, so I recommend using the fluff on these bad boys.  Like I said, best for last!
